CAULIFLOWER CASSEROLE

1 head fresh cauliflower
1 large can whole peeled tomatoes
1 large white onion
8 oz cheddar cheese cubed (approx.)
1 cup bread crumbs ( approx.)
2 tablespoons margarine/butter

  1. Clean and cut up cauliflower into flowerettes. Par cook til crips tender -- careful that it is not cooked til it falls apart since it will cook a bit more in the oven.
  2. Thinly slice onion and coarsley chop. Saute in margarine til translucent and tender in large fry pan and continue to brown a bit. If microwaved, just add and stir into onions.
  3. Put cauliflower into large casserole. Add can of tamatoes including juice. Cut tomatoes into approximately 1/4 pieces. Add cubed cheese, onions with bread crumbs and season with salt and pepper ad desired.
  4. Stil carefully with wooden spoon so cauliflower doesn't break up.
  5. Melt about 1 tablespoon margarine in bowl in micro or use small pot--stir in about 1/2 cup bread crumbs. Sprinkle on top of casserole.
  6. Bake about 1 hour. at 350, or til browned and heated through ( bubbling in casserole )
