Cream together: 1 lb butter 1 lb powdered sugar (can make in blender from granulated sugar) 2 Cups granulated = 1 lb Add: 2 whole eggs ½ lb. Ground almonds 1 ½ lb. Flour (Do not sift) [5 cups Approximate rind of 1 lemon Chill thoroughly. Roll out to approx. 1/8" thickness and cut into desired shapes with cookie cutters. Do not need flour when rolling. (Does also work in cookie press if you don't chill. Cookies will be a bit thicker and will take a little longer to bake.) Brush cookies with egg white and sprinkle with colored Nonparels (small round colored sugar) for decoration. Bake at 375 degrees F. about 10 min. Amount of time may vary. Cookies are done when slightly brown and bottom is light brown. Cool several minutes before removing to cooling rack.
